Cadillac

 

The sweet wine is picked by hand during several days to select only the best berries for this prestigious wine. The botrytised grapes were pressed and then the wine fermented in French oak barrels for 12-18 months before bottling.

Cadillac has notes of honey, ripe stone fruits such as peach and apricot on the nose. It also has some spice and vanilla aromas. The acidity brings freshness to the sweet wine and supports the aromas. The wine has a long aftertaste that reminds of apricot marmalade and bitter almonds. 

This wine has plenty of sugar so it can be consumed with cheeses (especially Roquefort and other blue cheeses), patés and terrines. Also great with dark chocolate desserts. Cadillac is ready to be consumed but because of its high content in sugar and acidity, it can be stored for years, even decades.

Try also in a Cadillac & Tonic -drink - mix 2 parts of Cadillac sweet wine and 1 part of good tonic water (our favourite is local & organic Archibald tonic). Add a few ice cubes and a slice of orange - cin cin !
