Sauvignon Gris

 

This wine is made of 100% Sauvignon Gris - a rare variety in Bordeaux. It is carefully selected and picked by hand then pressed (whole-bunch). The juice will then settle in a cold temperature for about 24 hours. Then the clear juice is racked into old French oak barrels (5-12 years-old) and natural fermentation takes place in these barrels.

The wine matures on lees in the same barrels for 10 months before bottling. We gently stir the lees during ageing (batonnage).

Sauvignon Gris is a rich and complex dry white wine. It has plenty of citrus-like freshness and exotic fruit aromas such as passionfruit and pineapple. The taste is dry & intense, which makes it a nice pairing for fish & seafood, poultry and pork as well. Try with classic Scandinavian Toast Skagen (shrimp toast), smoked fish or cheeses, especially goat’s cheese is a nice combination with this wine.
